I'm sure you can, though I've only ever had one profile on my Xbox so I've never done it myself. Try disabling off the automatic profile log in then see if you have an option to remove one of the profiles from the Xbox.

Getting the co-op levels finished should be easy enough, but if we wanted to try and get the other online achievements I have no idea how long that would take us, never even looked at them before.

It's all Trueskill ranks. 4 of them, 10, 20, 40 and 80 points respectively. First couple should be do able. Then 2 10 pointers for each of the co-op levels (which dont seem insurmountable on their hardest difficulty, from what me and Jen gathered).
Just need to find out if we can start proper ranked matches between us
