The only one that will probably beat me is the Expert career, everything else looks doable to me

So here we are, over a year since this comment, and I finally beat Freya. It's probably the first time I've tried it in about 6 months, but I figured that since I was armed with GH3 and Rock Band skills, I may be able to get past it. Thankfully, I was right and managed it first go. Unfortunately Psychobilly Freakout still raped me in the next tier, but at least I'm finally there!

That's a matter of opinion. I find GH III easier (bar the boss battles) so I play it less than GH II. So in my opinion, go for GH II.

Agree with Burble, GHIII Easy/Medium/Hard are all easier than their GHII equivalents imo - which could either be a good or bad thing depending on which way you look at it!
I'd say get 2 but only because it's a better set list for me, and a smoother learning curve (on the 360 version anyway).

How well does the wireless work on III? I sorta prefer the track listing on III, but I've heard rumours about a button delay due to the wireless?

I prefer the wired one. But it was the first one I used, so that might have something to do with it. Sometimes when I play a tricky solo, I nail it with the wired controller, and not so much with the wireless - I'm honestly not sure if it's down to familiarity or the geetar itself.
