Default A quick salmon dish with lazy chilli roast potatoes

I guess it depends on your definition of quick, but after the potatoes are par-boiled it only takes 35 minutes to get to the plate. You could make mashed/boiled and reduce the time as it's the potatoes that take the longest. Salmon is quite often on offer at 50% extra free or BOGOF (and is freezable in the packet it comes in) so no longer a particularly expensive dish, and I love it!

I've decided to condense the recipe into two brief slides that shouldn't be difficult to follow. Now pay attention 007.

1. Par-boil some new potatoes until almost done, then transfer to a tray of hot olive oil (deep enough that you can tip it and spoon oil over them from the corner of the pan). Put salmon fillets on some foil, bung some lemon juice, salt and pepper on them and wrap them up. After the tats (hehe) have been in the oven for 15 minutes on 190, put the salmon in too.



2. After ten minutes, spread lazy chillies (about 1 tspn) over the potatoes (and mix well along with the remaining oil) and boil water for the green beans and broccoli. Add the beans, then the broccoli a couple of minutes later. A further ten minutes after putting the chilli on, remove everything from everywhere and devour like you haven't eaten in a week.



The potatoes were cut small so consumed a fair bit of the oil and were very moist, negating the need for a sauce. But you can make one if you want.

He doesn't like many veggies or much fish - if I serve them up he will eat them but I'd rather do stuff he'll enjoy than just wasting money of food like salmon which he won't

True, but avoid if you can. I find it doesn't come out the freezer as nice as when it went in. Yeah, I know some may say that about many things, but from past experience salmon seems to be noticeable.

I've never found that with salmon, unless you freeze it for too long or don't freeze it as soon as you get it home.

Not that it's a problem - far more likely to get eaten than frozen around here. Nom!
