Default Replacing image in layer using CS3 - How?

On this page the instructions say "Just replace the image and make sure the layer mask goes with it and you should be all set!" but I have no idea how do do that, despite having had a quick play.

Can anyone give me a step-by-step guide how to do this?

So is this so basic that everyone thinks I should already know, or is it so complicated that nobody knows how to do it?

I've spent an hour or so trying to work out how to do it with no success. Layers confuse me.
