Pork (Diced)
Right, well family are having KFC tonight, i'm not a huge fan of that unless it's the boneless stuff, so i've passed on that.
I looked in the fridge, and found diced pork that I presume my mum bought yesterday. What can I do with it? I usually do a honey and mustard sauce and have it with rice, but obviously that gets a bit boring after the fifth time, so I was wondering if anyone had any fairly quick, easy and simple (flavour wise) recipes or ideas that I could do with it?

Kebabs ? we had them last night.
Pork, red onion, peppers & pineapple stabbed onto skewers and grilled for 15 mins. We had them with Jacket Pots |

Kebabs is an idea, i'll give that a bit of thought, depends what veg is downstairs, it'll depend what came in the box this week.

any number of thaio dishes if you have any Thai ingredients.
Or if you have peanut butter, lemon juice and coconut (milk or descicated) satay pork with rice. Umm satay I want that now .. made myself hungry..

If you don't know
Not sure of qauntities but Peanut butter lemon juice (or lime juice depends what you want, just want a hint) chilli coconut water. Bring to the boil and it goes into a thick sauce. keep adding more water and boiling till the required consistency. As for the meat do piggymons idea will go excellent with the sauce.

Well that kinda worked, there was a slight issue with the coconut milk and peanut butter making some strange incredibly thick paste for no apparent reason (like twice as thick as the peanut butter on it's own), but that was easily sorted with a lot more coconut milk. Bit of chilli sauce and chilli flakes, some garlic, lemon juice, coriander and some dark sugar and it came out pretty nice in the end.
The rice went a bit wrong but i'm not convinced that's my fault, it's the same rice i've always used and cooked perfectly, but the last three times i've cooked it (ie. last two weeks), it manages to go from undercooked to 'rice mush' in about 23 seconds, with seemingly no explanation, which it has never done in the 3 years i've been using it :S
