Default I'm making Dhal for tea

As with all of my recipes I don't go by measures I go by sight and taste.

Lentils (I use about 3/4 bag of lentils)
1 Tin plum tomatoes
Onions (approx 2 large ones)
Garlic (approx 4 cloves)
Potatoes (approx 2 large or equiv)
Veg ghee (marg will do)
Turmeric
Cumin
Chilli powder
Salt to taste

1. Peel and chop potatoes into small pieces (about 2cm cubes) and put in pan with lentils. Add tomatoes and give them a quick chop (or buy chopped ones!)

2. Add about 1tsp of Turmeric, 1tsp of Cumin, a quarter tsp of Chilli and about 1tsp of salt. Add boiling water to cover and pop on stove to simmer. You may need to top up water as lentils soak it up so check regularly and stir to avoid it sticking and burning.

3. Chop onion in long thin strips or rings, crush garlic and fry both in a pan with the ghee on a low heat til golden and caramelised. The amount of ghee/marg you use all depends on how healthy you want to be!

4. Once potatoes are soft lentils should be cooked and have soaked up all the liquid. Add the onion/garlic mix to the pan and stir in. Taste and add more spices and salt if needed.

Serve in big bowls with an Indian bread or on a bed of boiled rice.

Comfort fooooooooooooooooooood!
