I just thought I would:

a) Ask if anyone has a good recipe

and

b) Warn people NOT to use Nigella Lawsons recipe (http://www.nigella.com/recipes/recipe.asp?article=1234) unless you wish to produce white chocolate turds in a muffin case.

Hmm pheebs

I have used that very recipe from Nigella (its from her Feast Book)

and it worked a treat!

I have a few great ones at home, will put them up this evening

Sponge cake recipe works well to be honest and make cupcakes.

Pheebs, did you stir the mixture thoroughly? To make the perfect muffin, there should be as MUCH air in the mix as possible. You should mix it until literally only just combined. It will look lumpy and crap, but trust me it makes them rise beautifully.

I use Delia's recipe.... it's this one only with the pecans/blueberries removed and lots of chocolate chips added http://www.deliaonline.com/recipes/b...s,1274,RC.html

Yup... I followed the recipe religiously and really ensured it was airy and everything (though when I tasted the cold mixture it wasn't half horrible... not like normal cake mixture)... and they turned out awful!

(I say this and Picky is working his way through them - he seems to like them - despite the fact he has to eat them with a spoon as they're all weird shaped! I managed to pick the chocolate off the top of one... and that was about it!)

I am really REALLY quite bad at making desserts (other than about 4 I made up and couldn't really tell you the recipe... I just plonk things together, taste them, add missing bits, chuck in oven). When I was with the Marines as a civvy chef they stuck me on desserts and pastries for a whole week (I think they just wanted to see me do lots of whisking action... if you've witnessed my whisking you'll understand why). I was pants. They soon learned their errors and plonked me back to making wicked curries and nom-tastic high carb fud!

I don't know why... even simple things like flap jacks! I've followed recipes word by word and they will come out gooey/burnt/weird tasting etc. The last batch I decided to do went so crispy (though not burnt mind you) that Picky used them as breakfast cereal

I just want a recipe that's easy and workable

I can make cake and sponge... so may just do the same mixture and make cup cakes.

But.

I want to make new things! And cakey moist and nommy things too! Not jellys and poofy things like that! My boy needs hard core yurmmy fattening fud!

Help me chefaroos! Pleeeeeeeeeeeeaaaaaaaase!

Haha! Pickers seems to get all the failed experiments that one would normally feed to the family dog... whilst Trio tucks into a nice Shepherd's pie or some roast beef.

He has the choice not to! But he's a nom monster! He just eats anything... even if it is bordering on being inedible!
