Your BBQ Recipes
We've been cooking some interesting food on the BBQ this weekend and I just thought it'd be a good idea to start up a thread for this year's BBQ ideas.
First off we had Rainbow Trout, simply because I went into Morrisons on Saturday morning and it looked very fresh indeedy. I just fancied it. Also bought a couple of those fish holder thingies which you use on the BBQ to stop them sticking. I gutted the fish and stuffed them with a generous handful of dill, a couple of lemon wedges and a few cubes of butter. Then I scored the skin and rubbed in some sea salt and freshly ground pepper. Cooked on the BBQ until they looked done, served with salad, olive & sun-dried tomato bread and avocado/tomato/red onion salsa. Beautiful!!! On Sunday I decided that I wanted to see how successful squid was on the BBQ, so I went back and bought some fresh from Morrisons. Couldn’t believe how cheap it was. To cook enough for 2 people it cost £1.48!!! I used a Gordon Ramsay recipe from his new book, where you basically marinate the squid in rosemary/thyme/lemon juice/coriander/olive oil. Then you remove the squid, add cannelloni beans and roasted red peppers to the pan then heat on a BBQ for a few mins. Next you cook the squid on the BBQ for literally 1 min each side. Mix it all together and munch with bread/salad. Really really gorgeous. I can't believe how bloody nice this was! NEXT we had some langoustines in the freezer because we’d bought them whilst they were on offer in Tesco once. All I did with these was skewer them, rub in some garlic/salt/pepper, squeeze some lemon juice over and drizzle with olive oil. Few mins each side. Done! Finally, we were feeling a bit guilty because the BBQ was still piping hot, so I rushed into the kitchen and quickly prepped a couple of chicken thighs. I shoved rosemary under the skin and rubbed in salt, pepper and garlic. Then I drizzled olive oil over and plonked them on the BBQ very close to the coals to brown it up, then a bit higher to let it cook in the middle. Leon said it was possibly the best chicken he’s tasted ever Larrrrrrrvely. I feel quite a fatty for eating all that this weekend now. Much MUCH healthier and tastier than cheap and nasty burgers/sausages though So... share your BBQ recipes

Cheap and nasty burgers and sausages might well be unhealthy, but damn they are awesome
BBQ'd king prawns do pwn though. |

BBQ's sea bass is one of the best foods on the planet! Second only to a bloody rare piece of steak.
I've never had BBQ'd squid done on an English BBQ but I've had it at a Korean BBQ and it was gorgeous! Squid can be quite chewy if overcooked but when it was BBQ'd it was really tender. |

I keep thinking of buying a small BBQ, still undecided though - our garden isn't really the kind of place you would want to sit out in for any length of time

Neither was ours before I sorted it out last week. We still had BBQ's sat on the step amongst the rubble though Do it!

Phils mum does a lovely prawn skewer.
She soaks the prawns in coconut milk and garlic overnight and then obviously BBQs them. They are yum! /Takes on board the trout recipie as I *still* have a trout in the freezer :/ Kate, fancy coming and cooking it for me

Prawn recipe sounds nice. Will keep my eyes peeled for more langoustines or prawns on offer in Tesco. They have them quite often.
