You can always pump the ISO up a bit to give you a faster shutter at the same aperture . Do you have ISO set to auto?

No.1 pic is good, could use a Natural Grad filter so the sky is not washed out.
Maybe a slower shutter speed to get the water fall more misty effect. It's all about playing around with the settings on the DSLR !
