Buy some garlic butter from a shop and dump a lump of it in the middle of the chicken?

Sounds like my sort of plan. I'll see how I feel (won't be happening for a few weekends anyway).

We're having chicken stuffed with brie and surrounded by a smoked pig crust tomorrow Dym. Thanks for reminding me. I've not cooked it for aaaaaaaaaaages and it's one of Leon's favourite dishes

No worries, it's a favourite at Chateau Dimtree as well
Mark, here're a couple of recipes that Mrs Dym has looked up... See if they're ones you might be able to manage http://www.channel4.com/food/recipes...ecipe_p_1.html http://www.goodtoknow.co.uk/recipes/...with-Parma-ham

Thanks Dym. Second one is at my level. Ingredient preparation is where I struggle.

Went to the butchers and bought two chicken breasts and some bacon.
I have two spiky packages! The oven is currently warming

Looks good, lad
I anticipate the photos of the awesome result when they come out of the oven and are served up

Sadly no cooked picture, suffice it to say that there was practically no fat in the bottom of the dish and they were incredibly filling and really flavoursome.
So that's two slices of the cheese used, what's next?
