pardon my ignorance - I know nothing about space and that sort of jazz. When it says that it is in 3 different colours for scientific interest, how many colours would actually be there in reality? Would be just be white?

As with most of these images, if you were looking at that region of space with the naked eye you'd probably see nothing of interest. The image is rendered in false colour to show the distribution of various gases which also has the pleasant side effect of creating some funky looking images for people to be amazed by.
