I'm making choc chip muffins tomorrow and these always come out lovely.


200g plain flour
50g cocoa powder (I go by what it looks like rather than measure)
1-2 tablespoons baking powder
pinch salt
115gm caster sugar
75g choc chips
2 eggs
100ml veg or sunflower oil
225ml milk
vanilla essence to your taste

Sift the flour, baking power, cocoa powder and salt in a bowl and stir
Add sugar and choc chips and stir
Make a well in the centre
In another bowl beat eggs with oil until foamy
Beat in the milk and vanilla essence
Pour the mixture into the well of dried ingredients and stir until just combined, it should still be lumpy
Fill cases 3/4 full and bake for 20-25 mins at 190 fan oven.

For cherry muffins substitute the cocoa for plain flour and use cherries cut in half instead of the choc chips.

does the mixture taste nice raw? Because miss nigellas tasted 'orrible!

Will have to try this again. I may employ someone to help me though to make sure I am not doing it wrong.

Hope they turned out yurrrmmmmy!

The ones I make do taste nice raw, kids always lick the bowl Going to make mine after lunch, think I'll make both sorts

i'm going to be having a go at muffins this afternoon
using the delia recipe, purely because i don't fancy using vegetable oil
making 6 lemon, and 6 choc chip - we'll see how they turn out!


results! rose FANTASTICALLY, but just choc-chip in plain 'batter' is a bit tasteless, i think next time i'll add some vanilla seeds or maybe some orange zest to liven it up. lemon is lovely, but maybe a bit dry. i might do some drizzling (lemon-drizzle-cake-esque) to see if that improves them.
excellent recipe, i'll have to experiment with what i put in them

I just thought I'd let everyone know I have just nommed a Blueberry Muffin and washed it down with a cup of tea and it was STUPENDOUS!!!

I need a good full proof, tried and tested, picture of the making and end product recipe that works to make these NOMTASTIC little bundles of fluffy joy that melt in my mouth Anyone up for the challenge?!?!

Pickys Sister tried to make some and they've turned out non sweet and look a bit like scones! Boo! We NEED a muffintastic nomtiscious recipe!

Kitten made some great muffins the other week and I will get you the recipe. They shall be sold on Friday along with cookies
