Correct, the original Xbox games don't have achievements on them. If you want to be a score whore and beat Daz and Haly for score really quickly I can recommend a few games

You're missing out some extras (missions, armour, weapons, spells), but the overall game is not that different. I loved Fable so I'm sure you won't notice any real difference.

The Saint is top of that list imo. I reckon there are some scoops which will only appear or be solvable if you're following the case files as well, so you basically have to be an uber god and never miss a trick.
I read somewhere that it's not actually possible to save everyone though in one play, no matter what you do.

It's the achievement I'll aim to get last, as it's the one which could see me kill something if I last 6 1/2 days then die.

Just your health, not your level (unless I've missed that somewhere). From what I remember, I think it takes something like 12 minutes for a full health level 50 character to die from the health reduction, so you need to keep moving and finding food.
My plan of attack on it is to do every other achievement first, but primarily the Zombie Genocider (killed 53,594 zombies in one game) as that unlocks the Real Mega Blaster, the most powerful gun in the game which can take down psychopaths in one or two shots. When I have that, I'll go straight into the game and get the 3 books which increase the amount of health you get from food (meaning I'll need to eat less). From there it's simply a matter of trying to survive for 14 hours straight. I swear if I die after 13 hours or something I'll snap the DVD in half :/
