Slightly late post regarding the dried yeast...
It'll keep in the freezer for ages or you can rehydrate it with a little sugar and water, keep it warm over night to bud and then refrigerate. you'll have your own cultures of fresh yeast that'll last for up to 2 weeks

I just had what is possibly the best pizza I've ever had, base was great with just the right amount of salt. There was no blandness at all and it was nicely thin and crispy. The double prove with the little bt of sugar worked perfectly.
Note: best pizza I've ever eaten, not just that I've made. This thread is an official success!
