Tonight we had Spanish chicken pie - sorry no pics. We were too hungry
To make it, peel around 500g of potatoes and bring to the boil. Reduce to a simmer for around 10-15 mins. Meanwhile, soften a sliced onion & a crushed clove of garlic in a little oil, then add some smoked paprika and fry for a minute to coat. Add a can of chopped tomatoes and bring to a simmer. Add some cooked, shredded chicken, a handful of halved olives and some chopped roasted peppers (from a jar). Season and heap into a pie dish. When the potatoes are cooked, drain and mash them with some smoked paprika and a little olive oil. Spread over the top of the chicken mixture and top with cheese if you like. Put in the oven on GM7 for around 15 minutes until golden. Serve with whatever you like. We had some leftover cheesey garlic focaccia from last night. Ruddy lovely and low fat too (minus the garlic bread of course )

Last night was sausages and mash. The sausages came from a butcher at the localish market and they were absolutely gorgeous! They didn't shrink one little bit in cooking so I will definitely be buying them again.

I did my version of Enchaladas last night........
Start my making some fajita's and then laying them in a deep over proof dish. (your normal fajita onions, peppers, marinated chicken, jalapeƱos, wrapped up in tortillas) Get a saucepan and sweat off an onion and 4 cloves of garlic in some olive oil, pour in a tin of chopped tomatoes and a squeeze of puree, let it thicken and then add a good slug of Reggae Reggae Love Apple Sauce (this is the key!) Pour a tub of sour cream over your fajitas in the dish, add some guacamole in dollops over the top and then pour your tomato sauce over the top, grate as much cheese as you like over the top of that and then bake on 180 for half an hour or until the cheese is melted and bubbling. I cannot stress how lovely this is ! It makes a nice change to just having fajitas and tastes very authentic

I've just polished off 2 (smallish) homemade hot cross buns. Made them yesterday and Leon doesn't like them so I suppose I'll have to eat them myself.. NOM!
We have my parents coming over for tea, so I'm doing herby baked lamb in tomato sauce (it's like a greek roast lamb, cooked for hours until it falls apart) with oregano & lemon roasties and garlicky greens (mangetout, broc & asparagus). For pud I'm doing a raspberry & orange tiramisu. AND I have a Green & Blacks dark choc egg to fit in at some point too FFS. Good job I went for a run this morning!!!

http://www.bbc.co.uk/food/recipes/da...ch_88456.shtml Although i used diced venison and slow stewed in the oven for 1hr30, can of chopped tomatoes instead. A lot more chilli(3 heaped teaspoons, of minded chiili)), a lot more paprika(2 tablespoons) and a touch of sugar. Make sure you fry the paprika and don't just add it in afterwards. Simply stunning.

Today, so far.
Breakfast was porridge (technically gruel as it was made with water, not milk) with cinnamon and some cottage cheese (not together though), mid-morning - more cottage cheese and banana, lunch was fajitas, afternoon was ham style Quorn in wholemeal rolls, dinner was beef stew made with lean beef, chickpeas, chilli, paprika, treacle, beef stock, red wine, carrots, onions, peppers and tatties - with a side salad. Supper will be yoghurt with blackberries.

venison and red pepper sausages, creamy mash, Julian carrots and caramelised onion&mushroom gravy..
Yum yum yum, the sausages where awesome.
