How does the old Jailbreak work when it comes to firmware updates? do we need to wait for word from the dev team on whether or not reds0w will work with 3.1?

No idea but it'd be a good idea to get the iBEC & iBSS files which can be used to jailbreak in the future if (when?) Apple firmly close the door. If you're a Mac user then you can follow the instructions here.

Chances are very high that redsn0w will not work with 3.1. There were dire warnings not to upgrade to the 3.1 Beta because the exploit had been fixed.

Fortunately I already have iBEC and iBSS files safely squirrelled away. No idea what they'll be used for I've got them. I've got my phone's ECID too.

This does bring back my problem with doing Option+Restore though. If I have to restore and I can't restore to the firmware I want, then that's the end of the Jailbreak.

didn't realise this was also out now. all the talk of it made me think it'd still be a while off but alas, its installing right now

Same. Some say it's a bit faster but the 3GS is fast enough for me (for now). In the long-run I may un-Jailbreak at which point I'd obviously upgrade, but not yet.

All this is far too complicated - whilst it would be cool the have a jailbroken phone for installing free software, I'm with O2 anyway, I just don't need it - and I just don't like fiddling with things I don't understand.
