More food! Chicken Zorba
Ingredients:
Chicken breast (1 per person) Pitta bread (2 per person) Lemon juice Coriander, cumin and tumeric Mint Lettuce, cucumber and onion Houmous Natural yoghurt Oil Prep: Chop up the chicken and sling it in a bowl with the spices, lemon juice and mint. Mix it up and leave it to soak in. I leave it about ten minutes but you could do it for longer. Chop up some cucumber (I forgot it, doh!) and raw onion and tear up some lettuce. Put it in a bowl for later. Mix equal parts houmous (I use the one with olives chopped up in it) with yoghurt to make what I call 'gunk'. Also put this in a dish for after the chicken is cooked. Cooking: Heat the oil and cook the chicken through. The tumeric is what gives it the nice yellow colour. I used all dry spices and mint, but fresh mint would be better. I actually have some in the garden but it's wet out and I'm a wuss. Empty the chicken into a bowl and pop the pitta breads in the toaster. With any luck they'll inflate and go a little crispy on the outside. Cut the edge off lengthways to make a little pitta pocket. You should now have three bowls - one with salad, one with chicken and one with gunk. Stuff the pitta to bursting in any manner you deem necessary. I put lettuce on the bottom layer to prevent leakage. Scoff readily. Should you fancy it afterwards, have a scone or some free chocolates you got in exchange for doing a lame questionnaire. I'll be having both!

Oooh that looks lovely
I love chicken and salad in pitta bread anyhow, but the 'gunk' sounds like it'd be great to add.

Ooooh that looks absolutely lovely. Nice as a lunchtime snack. Might have to try it and I'm sure low fat hummus + yog would make a lower fat alternative. Cheers Belmit

So I've done a variation of this tonight...
The chicken I've got marinating in a bit of curry powder (basically the spices as above), some salt and a little oil. Chunked up I have some onion, red, yellow and green pepper and that is all sitting ready to go in the grill in a few minutes. Meanwhile I have knocked up a yoghurt, finely chopped cucumber and mint dressing with a pinch of salt to dollop over the top and shredded some lettuce. The plan is to slap the chicken and veggies under the grill, then throw the lot in a large tortilla, spoon over plenty of the dressing and shovel it in. Damn I'm hungry thinking about it, I'd better get cracked into this wine in the meantime
