Default Mummy BBx's Carrot & Coriander soup! :D

This is delicious!!! I could eat it every day... easily - in fact I am



What you need:
4 carrots
1 medium potato
1 cube of chicken stock
Handful of chopped coriander leaves

1) Chop all veg into tiny pieces (as pic), melt butter in saucepan and stir fry the veg for 5-6mins.
2) Mix stock cube with some boiling water till melted (next time I will try with my own stock), then top up to 400mls and add to saucepan of veg and simmer for 10mins on med heat.
3) Take all the leaves off the coriander and chop finely. Add to pan.
4) After a couple more minutes separate the vegetables from the stock - take out the vegetables and let cool slightly.
5) Liquidise vegetables with a tablespoon of the stock... can do with a hand blender
6) Once all liquidised...return to pan and simmer for a couple of minutes then serve with a spiral of double cream (if you like )

Obviously if you let it to cool you can freeze it and use when you will.

I swear I took a photo of the last batch I made but it may have been on my old broke phone next time I make I will post more pics

Those vegetables are chopped up so small and neatly, I would never manage to do that...

Mine look like I have done it with an axe.
