Potato cakes
So everytime i make mashed potato i purposely make too much in the hope that the next day i'll be able to make the damn things. So far its not really worked sucessfully once. So what am i doing wrong?
Generally they just don't brown properly, and stay far to mushy. They taste alright, but i'm only really heating up mash with some butter in a frying pan right now I've tried adding flour and then they make excellent patties and look amazing but still don't keep shape and can't really be flipped. I was thinking of maybe binding an egg in with them next time thinking that will help them set? I could egg wash and flour i guess as well but thats messy work and washing; these are meant to be simple! Tips? Todays were actually corned beef hash (with mashed in carrot's) cakes and they tasted awesome, but still after knowingly burning one side in the hope they'd take some form of shape they still wouldn't sodding flip! |

All I use is potato, plain flour, melted butter and seasoning. From what I remember the ratio is 10:2:1 (potato:flour:butter). Make sure the mash is very smooth - using a potato ricer helps if you have one.
I mix everything together, knead for a minute or two then roll out to about 1/4" thick, cut and cook on a very hot dry griddle or frying pan depending what comes out of the cupboard first. |

It has been a while since I made them but I don't remember having problems with mine breaking up. Maybe try putting them under the grill when the underside is done?

You probably want to leave them to set in the fridge for a bit and get the pan hotter than hell hot before throwing the potato on the fire. Binding it with egg and coating in flour does work, but the pan needs to be so hot I can feel it from here.

Latkes are more of a dough with potato. I'd have to check a recipe though.
