Making chutneys and sauces?
Has anyone else made chutneys and preserved sauces?
What I'm looking for is the quantity or percentage of sugar and vinegar you need to obtain preservative qaulitys. Thought it would be easy to find on the web, but all I can find is actual recipes and saying the vinegar should be good quality.

I made a Delia Smith mango chutney and it was quite evident that she'd never made it before because it didn't work and needed serious doctoring. It was this one: http://www.deliaonline.com/recipes/m...ey,836,RC.html
There was nowhere near enough liquid. I used the same ingredients with smaller quantities. I like your way of thinking, with the right ratios you could chutney pretty much anything. One to ask grandma about probably.

This is my favourite recipe. I have used it many a time and normally end up making about 3 batches as people keep asking me for it. Works well as a proper preserve as I have eaten the stuff a year later and it was still fine. I always keep the volumes of sugar, vinegar and fruit/veg the same but vary whatever spice, veg or fruit I use. I always use white wine vinegar (as I am impatient and normally want to have some right away) but if you are happy to wait 3 months then malt vinegar is fine.

I have to make HUuuuuuuuGE EnoRMOUS batch full loads of "my" chutney around Christmas (it's Delias Christmas Chutney... although I tend to play around a bit with the ingredients... and no not in a "Hello my names Mister Prune, want to come for dinner Mister D Apricot?" way ) Pickys Brother in Law thinks it's the mutts nuts (it's blooming lovely but I still heart mango chutney and sweet onion chutneys! Omn om nom nom nomnom!) When he ran out last year, Pickys Sister went mad trying to find something of "equivilent" taste/superbness and Dan just kept saying "Nope... not as good as Pheebs". Poor lady bought hundreds of jars of chutney and he was a complete pain in the butt and said he wanted my one (don't put the pressure on too much or anything!)
He received about 20 jars of it at Christmas this year to keep him going Tis a messy job but muchos fun - the recipe I use is...Delias Christmas Chutney Very nommable |
