Default Veggie cooking with Jonny69: Stuffed potato skins

Bit of a back to basics no brainer cooking thread this one, and I'm sure it's obvious how to make stuffed potato skins. However, I took the photos and I'll damn well post the thread. You can't stop me...

First the not so obvious bit. Whenever I make mashed potato I always have stuffed potato skins the next day. To make my mash I bake the potatoes in their skins in the microwave oven, scoop the insides out for the mash and keep the skins for the next day. Simple, but no waste.

Take a half potato skin, smear a teaspoonful of sour cream round the inside. Load it up with grated cheddar. Top with jalapeno chillis. Put them under the grill until the cheese is bubbling and the skins are hot and crisp again:



Mind your mouth on the hot cheese

Non veggie options work well with bacon, chorizo, sausage, chilli, etc. I didn't need to tell you that though
