Default Stuff I have made over the last few months.



Fillet of beef, braised carrots, beef jus, beetroot puree and butternut squash terrine.




Pan fried salmon, griddled asparuagus, hollaindiase and deep fried rocket.





Strawberry sorbet, lime parfair, balsamic strawberries.




Strawberry sorbet, lime parfait, basil pannacotta and strawberry jelly.





Chocolate deiice, hazelnut spears and coffee foam





Raspberry cream, merringue, rapsbery coulis and raspberries steeped in a raspberry liqueur





Blinis, crème friache, caviar and chives





Blinis, smoked salmon, horseradish crème fraiche

Stuffed courgettes, ricotta, pine nuts, fresh basil and lemon juice, drizzled with balsamic vinegar.

Apart from the main courses and the desert on the black plate the rest was plated up in front of 20 guests, all the prep done in advance.

It was good fun making these in front of everyone...



The last picture, I also made the other salmon canapés on the silver platter.
