Pumpkin cake
Well, I bought a pumpkin the size of Jupiter for Halloween and had to do something with all that bloody flesh. Someone at work gave me the free Asda Magazine which contained lots of recipes, including a pumpkin cake. It said it tasks like carrot cake, which I LOVE, so I thought I'd give it a go. End result? It's absolutely gorgeous and I heartily recommend it.
Here's a pic: And recipe if anyone's interested. linky

It is rather beefy. I only made it because I had a pumpkin excess. Need to offload it onto parents and work colleagues now as I'm supposed to be eating healthily

Well, people at work were very interested until I told them it was pumpkin cake. Then they wrinkled their noses up and shuffled off. So, I told the next few people it was carrot cake and it got nommed down. When I told them it was actually pumpkin cake, they said they thought it was nicer than carrot cake anyway. Tch!!! What's with all this pumpkin prejudice?

Personally, I think pumpkin is one of the most underrated vegetables. My aunt used to make a sweet pumpkin pie and it was amazing. So funny the way people turn their noses up at something when they think it'll taste funny
