A Good Chilli Paste Recipe?
Does anybody have a recipe for a good chilli paste?
I've found a few, and essentially all seem the same, but wondered if anybody had some good tips/tricks or secrets? Want to make one this week & do prawn and maybe crispy beef on friday |

If you're after a green or red Thai chilli paste I could try and remember what I put in mine a few weeks back:
Though I may forget a couple of ingredients...

@Belmit, what are those orange-brown things in the bottom right? I don't think I actually recognise them!

Ginza root, though a quick search doesn't really bring up anything much on it as most places seem to think it's the same thing as galangal which I don't think it is. Galangal is on the far left in the pic (looks white because it was frozen!).

Ah, I thought the left one was (frozen) ginger! Not heard of ginza root or galangal, apparently they're similar to ginger, definitely a good number of ingredients there though
