Chocolate Orange Cheesecake!
Hey,
Made this yesterday as a pudding for the family and went down very well and so easy to make so thought I'd share: For the base:
Pop the biscuits in the bag and crush them with a rolling pin until they resemble how you’d like your boss to look after you’ve had your way with them and pop them into a bowl. Melt the butter and pour it over the top and mix together. Press this into your favourite tin – I used a a springform tin we have in the cupboard but I don’t know how big it is. Once in the tin get it n the fridge for at least an hour and preferably longer! For the topping:
Add the marscapone and stir together until it settles down to a uniform colour again and then add in the 50g of icing sugar to just give it that little bit of sweetness. Mix that all up once more and finally add the half bottle of orange flavouring – roughly 19ml – I just judged it by eye. Give it a final mix and the topping is ready! Next remove the base from the fridge and pour the topping over and smooth it out to make it look better. Finally return it to the fridge and and leave it for as long as you can – this may be quite hard if you like cheesecake! Enjoy!

Tada, not a fan of the base, i changed things around a little. I did add more butter, but it never really set to become a base, so next time i will cook something up in an oven prior. With the cheesecake i annoyingly couldn't find any orange extract anywhere in the short time i had today, so settled on lindt orange excellence (which was excellent!) and some fresh mandarins/clementines (small oranges i don't know ) and idn't bother with the sugar. Everything else i pretty much kept the same, but cut up each segment into thirds/quarters and added a few to the mix, and decorated with whole peeled segments. Next time i might add just a little sugar, although i'm still unsure about that, i'll definitely add more smaller orange bits, they are divine little orange explosions and perfect for this, and i'll pre cook the base so its crisper. Went down an utter treat though! |

Yeah it's just too soft otherwise, might make some kind of hazelnut biscuit-y base possibly. It just needs a little crunch to it, right now it's nice but soggy.

Wow simple recipe - I must try it in fact I have all the ingredients - bar marscapone so shouldn't be too hard.
