Low Fat Creamy Chicken Curry.... Nomtastic!
I got this recipe out of the weightwatcher's magazine, they have some delicious meals and I thought I would share this one with you guys
The recipe will serve 4 Ingredients: Low fat cooking spray 500g (1lb 2oz) skinless chicken breasts, cut into chunks 2 onions, peeled and sliced 1tbsp medium curry powder 300ml (10fl oz) hot chicken stock made from 3/4 cube 75g (2 3/4 oz) low fat cheese 110g (4oz) young leaf spinach For the rice: 250g (9oz) brown basmati rice 4 cardamon pods 1 tbsp crushed coriander seeds 2 tsp ground turmeric Method: 1. Mist a large, lidded frying pan with low fat spray and heat until hot. Add the chicken pieces and saute for about 5 minutes, until golden. Add the onion and 2tbsp water and saute with the chicken for another 5 minutes. Add the curry powder and cook for 1 minute before adding the stock. Now bring to the boil, cover and simmer for 10 minutes or until the chicken is tender. Remove the pan from the heat and stir in the low fat soft cheese and spinach. 2. Meanwhile, bring a large pan of water to the boil, add the rice and cook according to pack instructions. 3. Heat a small frying pan, add the cardamon and coriander seeds and dry fry for 30 seconds. Transfer to a mortar with the turmeric and crush roughly with a pestle. Stir the spices into the rice. This is absolutely delicious, and just for your reference each serving is 465 calories It is sooooo easy to do. Just before taking it off the heat Ready to plate Ready to eat!
